The head and tail of eels are cut off and then chained together in the can. The marinated sauce, based on vinegar, garlic, oil, bay leaf, and pepper, is the natural preservative that adds flavour. Eel is a good source of vitamin B2, and is high in Omega-3 and vitamin D. The famous Loch Ness Monster may actually be a type of giant eel that lives in Scottish lake waters. In Portugal, the eel is the most popular fish in the Ria de Aveiro.
The eel canapés with parsley and red or green pepper are delicious. They pair very well with white wine, Rosé and sparkling wine.
